I was scanning the news this morning when I ran across this post: “Welcome to Tofu Elementary! NYC School goes all-vegetarian.“
If you know me at all you know that this is one of the most exciting stories I’ve come across in a long time. Items on the all-veggie menu include black beans and plantains, roasted tofu in Asian-sesame sauce, falafel, cucumber salad, tofu vegetable wraps, vegetarian chili with brown rice, black bean and cheddar quesadillas with salsa. All meals meet the USDA protein requirements.
P.S. 244 principal Robert Goff says, “The founding of our school was based on health and nutrition and teaching kids how to make healthy choices in the belief that they would be more successful academically and in their life.”
Staff at the school noticed that the students, largely of Indian and Asian descents, were already eating many vegetarian meals, so the switch to a meatless cafeteria was less of a hurdle than it would be in other places.
